The general objective of this project is to promote the technology transfer, commercialization and marketing of natural sweeteners from nipa sap. The processes and procedures in this project will be based on the standard technologies developed by ITDI. Such involve the following: (1) method/period of sap collection including the tapping gadgets; (2) holding period for sap prior to cooking; (3) cooking procedures considering temperature requirements; and (4) standard type/size of equipment and materials used in production.
