This study was conducted to analyze the organoleptic components of flavoured chevon tapa as compared to the plain chevon tapa. Flavoured tapa is enhanced with garlic and lemon grass extract. A combination of experimental and descriptive method of research was used in this study. This was done in August 2010 with 50 walk-in respondents. Result shows that flavorings can enhance the appearance, texture, aroma, and taste of the chevon tapa. Moreover, there is a possibility that the flavorings can add nutrients to the chevon tapa.
