(Litz R.E. 2005) The researchers used the descriptive survey method of research and used purposive sampling method in selecting respondents. It was used to determine and evaluate the Sensory Acceptability and Proximate Analysis of Balimbing as an Alternative Way on Lowering Blood Glucose Level of Diabetic Patients in Batangas City, through conducting a lecture program as the media for gathering data and facts about the frequency of each expressed concerns. The level of acceptability of the respondents on the balimbing tea in terms of aroma has a weighted mean result of 6.75; in terms of color it has 7.10; in terms of taste it has 6.97; and in general acceptability, it has 7.67. Therefore, the balimbing tea, when verbally interpreted in terms of aroma, color, taste and general acceptability, is moderately accepted by the respondents. The proximate analysis of the balimbing leaves revealed the values of moisture, ash, crude protein, crude fiber, crude fat, and nitrogen free extract or carbohydrate contents present to be 66.67 percent, 2.64 percent, 0.32 percent, 0.16 percent, 0.52 percent, and 3.28 percent respectively. While the proximate analysis of the balimbing tea revealed the values of moisture, ash, crude protein, crude fiber, crude fat, and nitrogen free extract or carbohydrate contents present to be 99.77 percent, 0.10 percent, 0.07 percent, 0.14 percent, 0.10 percent, and 0.00 percent respectively.
