UTILIZATION OF PINEAPPLE (Ananas comosus) PEELS IN THE PRODUCTION OF SINGLE CELL PROTEIN USING Saccharomyces cerevisiae

The utilization of pineapple peels into single cell protein production has the potential to solve the worldwide food protein deficiency by obtaining an economical product for food and feed. Using food processing leftovers in the production of single cell protein as substrate would alleviate pollution. The animal feed industry would also benefit because the SCP produced would be used as an additive and source of protein. In this work pineapple peels were utilized for the production of single cell protein using Saccharomyces cerevisiae by submerged fermentation. After a series of experiments, it was concluded that production of a high yield of single cell protein from Saccaharomyces cerevisiae was possible by submerged fermentation. The properties of pineapple peels showed 50.96% holocellulose, 25.67% alpha cellulose, 25.28% hemicellulose, 22.33% total extractives, 21.48% total acid insoluble lignin, 12.22% total sugar, 7.16% moisture, 5.20% ash, 5.04% reducing sugar, 4.92% total acid soluble lignin. This result indicates that it is a good substrate for the production of SCP. For the comparison on the percentage yield of single cell protein from pineapple peels using different media supplements, the result showed that the percentage yield, with a t-value of 2.86, has a p-value of .081. This meant that the percentage yield of SCP using different media supplements had no significant difference. For the comparison on the crude protein content of single cell protein from pineapple peels using different media supplement, the result shows that the crude protein content of P, PG, PS, and PSG were 57.845, 60.31, 54.435 and 61.905% respectively. This meant that the crude protein content of SCP using different media supplements had a significant difference. The properties of single cell protein from pineapple peels using the best media supplement were 12.265% moisture, 6.2% ash, 2.205% crude fat, 1.16% crude fiber, 61.905% crude protein. In the commercially available SCP supplement, the moisture, ash, crude fat, crude fiber and crude protein produced were 4.86%, 7.88% 1.79%, 0.58% and 60.2% respectively. Based on the p-values obtained, it showed that there is a significant difference in moisture, ash and crude fat. On the other hand, there is no significant difference in crude fiber and crude protein.
