Disclosed is a method of producing squash (Cucurbita maxima) cookies containing squash flour, egg, butter/margarine, brown sugar, vanilla, salt, peanuts or chocolates. Said process comprising the following: washing and peeling of squash; boiling the squash until it becomes soft; mashing the boiled squash; measuring ½ cup of mashed squash then set aside; sifting all dry ingredients; beating the butter/margarine until creamy; adding sugar. beat for 2 more minutes; mixing butter and egg; mixing all dry ingredients; adding the mashed squash and mix together; preheating oven to 350ºC (within 15 minutes); shaping dough in 1 ¼ inch balls; placing about 3 inches apart on greased cookie sheet; flattening in crisscross pattern with a fork; baking until brown 9-10 minutes; cooling on baking sheet for minutes; transferring to rack to cool completely.
