The utility model relates to a process of making wine from star fruit extracts comprising: collecting and extracting juice from star fruit, combining the yeast, muscovado, and star fruit extract in a clean jug, fitting a large balloon into the opening of the jug, securing the balloon with a rubber band, placing the jug-containing yeast, muscovado, and star fruit extract in a cool dark place, and fermenting the mixture in 15 days.
