The project focused on the development of coconut-based food products to maximize utilization of the crop and thus promote zero-waste processing. This project used two (2) main crops, normal coconut and its mutant – the makapuno. It made use of two (2) main parts, the solid endosperm or meat and the liquid endosperm or water. It covers formulation and standardization of the processes for coconut-based food technologies. This project also did pilot testing of the food products developed to evaluate their potential for commercialization.
