The risks posed by drug residues in edible meat and meat products cannot be taken lightly as reports of
non-compliant antibiotic residue positive meat samples were highly documented. To protect the health of
consumers, safe residue levels or maximum residue limits (MRLs) of pharmacologically active substances in meat
products were put in place to set the maximum tolerable levels in edible meat products from food-producing animals
previously administered with veterinary pharmacological agents. Unfortunately, it is not unusual for some pig or
poultry farms to administer inappropriate levels of antibiotics for extended durations often exceeding therapeutic
purposes. The problem is further compounded by inadequate regulatory controls and the indiscriminate use of
antimicrobials commonly observed in developing countries. Thus, screening for antibiotic residues could serve as a
crucial step to assessing any health risk and is particularly helpful in large-scale operations which could form as
basis before expensive, quantitative determination of residue concentrations is conducted. Ensuring that all meat
products that reach the consumers are compliant against drug residues is of paramount importance.
