Disclosed is a process of making yema containing pomelo peel, confectioner sugar, water and corn syrup. The said process comprising the following: peeling pomelo by coring deeply with knife pulling the peel off in quarters; removing the outer part of the peel; slicing the white cottony peel and wash with running water; soaking the pomelo peel with and sugar for at least 10 minutes; smashing the soaked pomelo peel mixture to remove the water; placing the sliced pomelo peel in a large pot; adding sugar, water, and corn syrup and bring to boil; simmering the mixture of pomelo peel, sugar, water, and corn syrup on low heat while gently stirring from time to time until most liquid is gone; and removing the pomelo peel mixture from pot and put in a flat surface separated from each other then sprinkle with sugar on the top and put into cover with label after the mixture cools down.
